Superbowl Cupcakes

Made these vanilla cupcakes with caramel frosting. Found the idea on pinterest. After frosting I dipped them in green sprinkles and used a little icing to stick the football icing decos on top.

  • 1 1/4 cups all purpose flour
  • 1/4 cup almond flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1 cup sugar
  • 1 stick butter, slightly softened
  • 2 lg eggs
  • 1/2 cup milk
  • 1 tsp vanilla
  1. Preheat oven to 350 and line cupcake tin with liners
  2. Whisk together flours, baking powder and salt
  3. In mixer combine sugar and butter and beat until smooth
  4. Add eggs, milk and vanilla, stir till combined
  5. Add flour mixture and stir till combined
  6. Place mixture in cupcake liners and bake about 15 minutes
  7. Let cool before icing.

Caramel Icing:

  • 1 stick softened butter
  • 1 cup dark brown sugar
  • 1/3 cup heavy cream
  • 1 tbsp vanilla
  • 16oz confectioners sugar
  1. Melt butter in saucepan
  2. Add brown sugar and cream. Cook over medium-low heat for about 2 minutes, until the sugar is dissolved
  3. Remove from heat and add vanilla
  4. Transfer to a large bowl
  5. Beat in confectioners sugar till smooth
  6. If frosting is too thick add a little more cream
