Made these vanilla cupcakes with caramel frosting. Found the idea on pinterest. After frosting I dipped them in green sprinkles and used a little icing to stick the football icing decos on top.
Cupcakes:
- 1 1/4 cups all purpose flour
- 1/4 cup almond flour
- 1 1/2 tsp baking powder
- 1/2 tsp fine sea salt
- 1 cup sugar
- 1 stick butter, slightly softened
- 2 lg eggs
- 1/2 cup milk
- 1 tsp vanilla
- Preheat oven to 350 and line cupcake tin with liners
- Whisk together flours, baking powder and salt
- In mixer combine sugar and butter and beat until smooth
- Add eggs, milk and vanilla, stir till combined
- Add flour mixture and stir till combined
- Place mixture in cupcake liners and bake about 15 minutes
- Let cool before icing.
Caramel Icing:
- 1 stick softened butter
- 1 cup dark brown sugar
- 1/3 cup heavy cream
- 1 tbsp vanilla
- 16oz confectioners sugar
- Melt butter in saucepan
- Add brown sugar and cream. Cook over medium-low heat for about 2 minutes, until the sugar is dissolved
- Remove from heat and add vanilla
- Transfer to a large bowl
- Beat in confectioners sugar till smooth
- If frosting is too thick add a little more cream
