Cheese Ravioli with Brown Butter Tomato Sauce



I love pasta, Kyle likes it also but not as much as I do. So I try to change it up each time I make it. I had the tomatoes from the farmers market and when I saw I had this recipe saved I knew they were perfect for it. This is my kind of after work dinner since it's quick and easy to make. Breakfast Mini Quiche



Here's another make ahead favorite of mine, these are perfect for breakfast in the morning. They're so small I can eat them easily while doing my morning paperwork at work. I put mushrooms, carrots and zucchini in mine. I made a big batch of them and then wrapped them in our sealer (you can use freezer bags if you don't have one). Just like the pizza bagels you can customize these to your own taste and what ingredients you love. Here's the link for these

Homemade Pizza Bagels


Yes I'm a big kid sometimes, but I really like those frozen pizza bagels. But I figured I could make them myself and they would be healthier than the frozen packaged ones and I can change up the toppings to whatever I like. These have my homemade sauce, pepperoni and mozzarella. Took the pic before they went into the freezer. Can't wait to mix up the toppings and make more of these. Since work is crazy for me this time of year I love having items like these that I can make ahead and freeze so they are ready when I want a snack or breakfast/lunch/dinner. Mac and Cheese with Chicken


This recipe looked amazing when I saw it on pinterest, but once I saw it was a Michael Symon one I knew I had to make it right away. No secret that I'm a huge fan of him and his recipes. He's the one chef that every recipe I've tried from him has come out amazing. This was a great dinner and even my husband loved it and he's not a fan of goat cheese (shhh, I didn't tell him what cheese was in this). Apple Bacon Stuffed Sweet Potatoes


I forgot to grab extra goat cheese (used the package I picked up for a mac and cheese) so I just made the topping and served over a sliced potato. Sour Cream Apple Pie


Took this picture as soon as it came out of the oven, made it early for dessert so it can cool and settle down. I really like the addition of sour cream to this pie. My apples got a little crisp on some of the edges, but I really overstuffed my pie with apples so that's the reason why. We had a ton of apples from apple picking so this was the perfect recipe. Baked Buttermilk Pumpkin Donuts

Caramel Apple Crumble Pie

Lasagna Stuffed Shells


The weather is starting to cool down here so to me that means comfort food. Since I already had sauce made (I make big batches and freeze it in batches to use for meals like this). I picked up fresh mozzarella at the local market, I'm not a fan of cooked spinach, so I put mine in uncooked (I'm a weirdo, but don't mind it cooked in something like this or a soup so I didn't precook mine before adding to the filling. Bolognese with Pappardelle


This is from the Rachael Ray Look and Cook book, I've made it before, but made it with a different pasta. Didn't feel right to me until I remade it with pappardelle. Since I was lucky enough to find some at the farmers market this recipe popped in my head to make. I also always make extra sauce and added some tomatoes I pureed into this since I like a heavier tomato taste in my bolognese. I love having extra sauce in the freezer for quick meals after a long day at work.

  • 2 tbsp extra virgin olive oil
  • 1/4 pancetta diced
  • 1 lb ground sirloin
  • 1 lb ground pork
  • 1 onion, cut into small dice
  • 3-4 garlic cloves, minced or grated
  • 1 carrot cut into small dice (I cut mine a little bigger, it's all about preference)
  • salt and pepper
  • 2 celery stalks, cut into small dice
  • 1/4 tsp grated nutmeg
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves, a couple of sprigs, chopped
  • 1 tsp dried marjoram or oregan
  • 1/2 tsp crushed red pepper flakes
  • 1/4 cup tomato paste
  • 2 cups red wine
  • 3 cups beef stock
  • 1 lb pappardelle or fettuccine
  • 1 cup milk
  • 1 cup grated parmigiano-reggiano cheee
  • 1/2 cup freshly chopped parsley
  1. In a large pot, heat the olive oil over medium-high heat, then add the pancetta and cook, stirring occasionally, until it's browned and the fat is rendered, 3-4 minutes.
  2. Add the sirloin and pork to the pot and brown 8-10 minutes, stirring occasionally to break up the lumps
  3. Add the onions, carrots, garlic and celery and cook, stirring, until the vegetables are softened 6-7 minutes
  4. Add the salt and pepper, nutmeg, bay leaves, thyme, marjoram or oregano and red pepper flakes
  5. Add the tomato paste and stir for a minute or so, then add the wine and scrape up all the drippings. reduce the wine by half for 2-3 minutes. Stir in the stock and bring to a boil. Reduce the heat to a simmer and thicken the sauce for 1- 1 1/2 hours, stirring occasionally to keep the sauce from sticking to the bottom of the pot.
  6. When you're ready to serve cook your pasta, when pasta is done (reserve a cup of pasta water), add milk to the sauce and simmer a couple of minutes to heat through. Discard the bay leaves and adjust the seasonings to taste.
  7. Drain the pasta, toss it back in pot it was cooked in. Toss with pasta water (cup you saved), cup of grated cheese and parsley. Add half the pasta sauce and toss well to coat.
  8. Serve the pasta in shallow bowls, topping with additional sauce.

London Travel Book

I love making lists and tried to find a book to include all the things I want to do while in London and our travel info. I couldn't find one I liked so I made my own. It's small enough to keep in my purse and I divided it into categories so I can easily find what I'm looking for.
