Grilled Sweet Potatoes with Rosemary Butter Sauce



These were delicious on the grill, since we had a high flame on for the meat we were making I made these in a pan made for the grill. So didn't get grill marks like the recipe, but still had a wonderful taste. Will be making more grilled sweet potatoes this summer

Chopped Salad with Homemade Buttermilk Ranch Dressing


The recipe I found on pinterest added bacon to this, since there was none on sale at the market I just left it out. The dressing was amazing, Kyle loved it and he's not a big fan of ranch dressing. I love making homemade dressings and this one came together so quickly. I love using mason jars for these dressings, makes it easier to store in fridge and serve. Personalized Iced Beverage Cup

Made this cup as part of the Mother's Day Basket I'm making. I bought a plain blue iced beverage cup and adding rub on alphabets and flowers to personalize it. Turned out really cute and I will be making more of these. Also sharing the Mother's Day Card I made to go with it.

Caprese Salad with Garlic Balsamic Dressing


I changed up the salad a little bit, adding spinach and since the grocery store we went to only had marinated mozzarella balls, we got a huge brick of fresh mozzarella and cut it up and placed on my favorite mixed greens. Scrapbook Pages

 I'm doing monthly highlights this year in the project life form, they will go in an album with other layouts I do of yearly activities. February was very snowy for us, we went to our favorite sushi restaurant and I made chocolate covered strawberries for Valentine's.

 March is all about St Patrick's Day (my grandparents wedding anniversary and why I picked our wedding date 3/15 - close to St Pats), I also made a few new Easter decorations

 April spring is finally starting to arrive- or so we thing, a few frost warnings in the morning and my daffodils died. On the nice days we went for walks and princess got a bow at the groomer for my bday

Lemon Parmesan Roasted Potatoes



I got this recipe from the latest food network magazine and it was the perfect side dish. Next time you're thinking of what side to make definitely make these. I used all red potatoes, but I will share the recipe that was published.


  • 1 1/2 lbs baby yukon gold potatoes, halved
  • 1 1/2 lbs baby red skinned potatoes, halved
  • kosher salt
  • 4 cups cubed day old sourdough bread
  • 1/3 cup extra virgin olive oil
  • 2 cloves garlic, grated
  • 2 tsp finely grated lemon zest, plus wedges for sering
  • ground pepper
  • 1/4 cup chopped fresh parsley
  • 1/2 cup grated parmesan cheese
  1. Preheat the oven to 450
  2. Put the potatoes in a large pot and cover with cold water by 1", season with salt.
  3. Bring to a boil and cook over medium high heat until just tender, about 7 minutes and drain.
  4. Pulse the bread in a food processor, combine with olive oil, garlic and lemon zest, 1 tsp salt and pepper.
  5. Combine potatoes with bread mixture and arrange on baking sheet. Roast until golden and tender, about 10 minutes. 
  6. Sprinkle with parsley and parmesan and roast 5 more minutes. 
  7. Transfer to serving dish, season with salt and serve with lemon wedges.
