Chicken Marsala


We love chicken in our house and I try to mix it up and make it a little different each time. So for dinner I made Chicken Marsala. Such a great and easy meal to make after a long day at work.

  • 1 cup flour
  • 3 tbsp olive oil
  • 10 tbsp butter
  • 4 cups sliced mushrooms
  • 1 1/2 cups marsala wine
  • 1/2 cup red wine
  • 2 cups chicken broth
  • salt and pepper to taste
  • 6 or 7 chicken breasts
  1. Add some salt and pepper to flour and dredge chicken on both sides with the flour. Lightly shake any loose flour off
  2. Heat the oil over medium high heat in skillet until very hot, add 2 tbsp butter and cook chicken till golden brown on both sides. You will probably have to do two batches of chicken, so before doing the second batch add another 2 tbsp butter to skillet.
  3. When chicken is cooked and brown on both sides transfer to plate and set aside.
  4. Add 2 tbsp butter and mushrooms. Cook while stirring on and off till mushrooms are golden brown.
  5. Add marsala wine and red wine and bring to a boil.
  6. Lower heat slightly and cook till has reduced by half
  7. Add chicken broth and 4 tbsp butter. Cook 5-10 minutes till sauce has thickened.
  8. Add chicken back to pan and cook about 5 minutes.
  9. Serve and enjoy.
