Peppermint Crunch Chocolate Chip Cookies



  • 2 1/2 cups flour
  • 3/4 tsp baking soda
  • 1 cup softened butter
  • 1 cup brown sugar
  • 3/4 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 8oz chocolate chips
  • 8 oz peppermint chips (or crushed up candy canes)
  1. Whisk flour and baking soda and set aside
  2. Cream butters and sugar till combined and add vanilla.
  3. Beat in the eggs one at a time till combined
  4. Add in flour mixture, stir till combined
  5. Using spatula stir in chips
  6. Shape into two logs (I made mine square because I like different shapes in my cookie baskets, but you can also roll into log so they cut into round circles)
  7. Refrigerate dough overnight.
  8. Preheat oven to 350
  9. Slice logs into 3/4" slices and bake about 10 minutes till cookies are lightly browned.
  10. Let cool and enjoy
