Peppermint Crunch Chocolate Chip Cookies
2 1/2 cups flour
3/4 tsp baking soda
1 cup softened butter
1 cup brown sugar
3/4 cup sugar
1 tsp vanilla
2 eggs
8oz chocolate chips
8 oz peppermint chips (or crushed up candy canes)
Whisk flour and baking soda and set aside
Cream butters and sugar till combined and add vanilla.
Beat in the eggs one at a time till combined
Add in flour mixture, stir till combined
Using spatula stir in chips
Shape into two logs (I made mine square because I like different shapes in my cookie baskets, but you can also roll into log so they cut into round circles)
Refrigerate dough overnight.
Preheat oven to 350
Slice logs into 3/4" slices and bake about 10 minutes till cookies are lightly browned.
