Found this recipe on pinterest from the cheese pusher blog. Went great with the grilled chicken we had.
- 2 tsp olive oil
- 4 cloves garlic, minced
- 2 tbsp butter
- 1/4 tsp salt
- 1/2 tsp pepper
- 3 cups chicken stock
- 1/2 lb spaghetti or angel hair pasta
- 1 cup grated parmesan cheese
- 3/4 cup heavy cream
- 2 tbsp chopped parsley
- Bring olive oil to medium high heat in a pan.
- Add garlic and stir, let cook about 2 minutes.
- Mix in butter and stir till melted.
- Add salt, pepper and chicken stock.
- Raise the heat to high and let come to a boil.
- Once it's at a rolling boil add pasta and cook according to package directions.
- Reduce heat to medium and mix in parmesan stir till melted.
- Turn off the heat and stir in cream and parsley.
