Lemon Vinaigrette Potato Salad

This is a great refreshing summer salad, that's different then your usual potato salad because there is no mayo in it. This was a great side dish for the steaks we grilled up.

  • 3 lbs red potatoes cut into 1" cubes
  • 1/2 cup olive oil
  • 3 tbsp lemon juice
  • 2 tbsp fresh basil
  • 2 tbsp fresh parsley
  • 1 tbsp red wine vinegar
  • 1 tsp grated lemon peal
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 small onion, finely chopped
  1. Place potatoes in a large saucepan and cover with water. Bring to a boil, reduce heat, cover and simmer 10-15 minutes until tender.
  2. In a bowl combine olive oil, lemon juice, vinegar, lemon peel, herbs, salt and pepper. Mix and set aside.
  3. Drain potatoes, place in large bowl, add onion and drizzle with olive oil mixture.
  4. Serve warm or chill until serving.
