Eggplant Rollatini with Spinach

I used fresh basil from my garden and the mozzarella and spinach are from the local farmers market. This was a wonderful dinner for the girls night I hosted and the leftovers make the perfect lunch for work the next day. Eggplant is a favorite of mine and I remember helping my grandma pick it from her garden and we'd make such amazing dishes with it. Here's the link to the recipe
