I tried a new Irish Soda Bread recipe this year that I saw while watching Rachael Ray.
- 2 1/2 cups currants
- 1/2 cup water
- 5 cups flour
- 1 cup sugar
- 1 tbsp baking powder
- 1 1/4 tsp salt
- 1 1/4 tsp baking soda
- 1 stick butter
- 2 1/2 cups buttermilk
- 2 lg eggs
- Preheat oven to 350.
- Boil the water and place the currants in a small bowl and cover with boiling water to reconstitute. Let stand until softened and plump and drain.
- In a lg bowl combine flour, sugar, baking powder, salt and baking soda.
- Add the butter and incorporate into mixture until in lg sized crumbs.
- Mix in currants
- In a medium bowl whisk together buttermilk and eggs. Add to dry mixture. Stir until incorporated.
- I baked this in a dutch oven that I sprayed with cooking spray.
- Bake 1hour 20 minutes (until toothpick inserted in center comes out clean)
- Let cool a little before removing bread from pan.
