- 1 large egg
- 3/4 cup brown sugar
- 2 tsp vanilla
- 1 stick butter, softened
- 1 1/4 cups flour
- 1/2 cup rolled oats
- 1 1/4 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 2 tbsp milk
- 1/2 cup chocolate chips
- Preheat oven to 350 and line cupcake tin with liners
- Whisk egg and sugar together until creamy
- Add in flour, baking soda, salt and cinnamon.
- Add milk and stir till combined.
- Stir in Chocolate chips
- Drop batter in liner and bake 15-17 minutes.
- Let cool before frosting.
Cinnamon Sugar Choc Chip Frosting
- 2 sticks butter softened
- 2 cups powdered sugar
- 1/2 cup brown sugar
- 1/4 tsp cinnamon
- 1 tbsp vanilla
- 1/3 cup mini chocolate chips
- Beat butter till creamy and slowly add in powdered sugar.
- Add brown sugar, cinnamon and vanilla.
- Fold in chocolate chips and frost cupcakes.
