Scalloped Potatoes
- 4 cups thinly sliced potatoes
- 3 tbsp butter
- 3 tbsp flour
- 1 1/2 cups milk
- 1 tsp salt
- 1 cup grated cheddar cheese
- 1/2 cup grated cheese for top (I used a mixture of colby and muenster, use your favorite)
- Melt butter and blend in flour
- Preheat oven to 350
- Whisk in milk to flour mixture
- Season with salt and cook on low till smooth and boiling, stir on and off with whisk
- Stir in 1 cup cheddar cheese and take off heat once melted
- Place half the potatoes on bottom of lightly greased baking dish
- Pour half the cheese mixture on top
- Cover with remaining potatoes
- Top with remaining cheese
- Sprinkle with 1/2 cup cheese
- Bake for 1 hour uncovered.
