Peppermint Crunch Chocolate Chip Cookies
- 2 1/2 cups flour
- 3/4 tsp baking soda
- 1 cup softened butter
- 1 cup brown sugar
- 3/4 cup sugar
- 1 tsp vanilla
- 2 eggs
- 8oz chocolate chips
- 8 oz peppermint chips (or crushed up candy canes)
- Whisk flour and baking soda and set aside
- Cream butters and sugar till combined and add vanilla.
- Beat in the eggs one at a time till combined
- Add in flour mixture, stir till combined
- Using spatula stir in chips
- Shape into two logs (I made mine square because I like different shapes in my cookie baskets, but you can also roll into log so they cut into round circles)
- Refrigerate dough overnight.
- Preheat oven to 350
- Slice logs into 3/4" slices and bake about 10 minutes till cookies are lightly browned.
- Let cool and enjoy
