Rainbow Cookie Cupcakes
I added raspberry jelly to my version of these and decorated them for Easter. They were so good and disappeared quickly. These were a lot easier and less time consuming then a regular rainbow cookie so I loved this recipe since I was making it after working a late night at work. Here's the link to the recipe

Fluffy Waffles
I love waffles and definitely don't make them as often as I should. So when we have a morning we're both off and have no plans I take out the waffle iron and try a new recipe. Eggplant Parm Sliders

Mushroom Marsala Pasta Bake

Chicken Francese

Apple Crisp Stuffed Apple

Mac and Cheese with Bacon
We love Macaroni and Cheese I clipped this recipe from the April 2014 Rachael Ray Magazine. You can either put this in small ramekins or a larger countainer like I did.
- 6oz bacon, cut crosswise into 1/4'' thick strips
- 1 small leek, haled lengthwise and thinly sliced
- 2 tbsp butter
- 2 tbsp four
- 1 tsp salt
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 cup grated aged gouda
- 1/2 cup grated fontina
- 1/2 cup grated extra sharp cheddar
- 2 tbsp chopped flat leaf parsley
- 8oz elbow macaroni
- Preheat oven to 350, in a large saucepan cook the bacon over medium heat, stirring often until crisp, about 5 minutes. Using a slotted spoon transfer the bacon to paper towels to drain. Pour off all but 1 tbsp of the drippings. Add the leek and cook, stirring often, until tender, about 5 minutes.
- Add the butter, stir to melt, add the flour, salt and season with pepper and stir for a minute. Whisk in the milk, cream and 2 cups water. Bring to a boil, then reduce heat to medium and simmer until slightly thickened, about 5 minutes.
- In a large bowl combine the cheeses. Stir 1 cup of the cheese mixture, the reserved bacon and parsley into the sauce.
- Divide the macaroni among six 8oz ramekins or pour into an 8x8 baking dish.
- Top with the saue, and stir to coat the pasta. Sprinkle with the remaining 1.2 cup cheese. Bake until sauce bubblesand pasta is tender, 20-25 minutes for ramekin and 25-30 minutes for baking dish. Let rest 10 minutes before serving.

Guiness Brownies

Frenagel
I saw an article in the local paper of a bakery not that far from us serving these new items called a Frenagel, it's a mix of a french donut and a bagel, filled with cream cheese (this one had scallion cream cheese). These are one of the best things I've ever ate (maybe they should be on food network). So delicious I can't wait to go back for another. We also had wonderful rainbow cookies and an eclair that was also amazing. Can't wait to check out more treats from this bakery. Irish Soda Bread
I love Irish Soda Bread, takes me back to being a kid and my grandma making this for me. I was only 10 when I lost my grandma so while I don't have her recipes I love to find recipes that remind me of her. This one was delicious and it makes 2 loaves so it's perfect to bring an extra to a neighbor. I do also have a savory Irish Soda Bread recipe I want to try out before St Patrick's Day. Loaded Sweet Potato Skins

Irish Stout Cupcakes with Cinnamon Cream Cheese Frosting
It's March 1st and almost St Patrick's Day, being Irish I had to start off the month with a festive recipe. The recipe I used for this made these with Guinness, I used a local beer - Brooklyn Brewery Irish Stout. These cupcakes were amazing and will be making another appearance in my kitchen soon.
