I got this recipe from Bon Appetit magazine and have had it saved for awhile. Glad I finally made it.
- 1 3/4 cup flour
- 1 tbsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 3 lg egg yolks
- 3 lg egg whites
- 2 sticks melted butter
- 1 cup buttermilk
- 3/4 cup seltzer
- 1 cup ham, sliced into strips
- 3/4 cup shredded white cheddar
- Whisk flour, sugar, baking powder, baking soda and salt and set aside.
- Whisk egg whites in separate bowl until soft peaks form
- Whisk egg yolks, melted butter, buttermilk and seltzer. Add slowly into dry ingredients.
- Fold in egg whites
- Pour batter onto waffle iron and sprinkle with ham and cheese.
- Cook until golden brown and keep warm in oven until you finish all waffles
- Serve with maple syrup and enjoy
