We love chicken in our house and I try to mix it up and make it a little different each time. So for dinner I made Chicken Marsala. Such a great and easy meal to make after a long day at work.
- 1 cup flour
- 3 tbsp olive oil
- 10 tbsp butter
- 4 cups sliced mushrooms
- 1 1/2 cups marsala wine
- 1/2 cup red wine
- 2 cups chicken broth
- salt and pepper to taste
- 6 or 7 chicken breasts
- Add some salt and pepper to flour and dredge chicken on both sides with the flour. Lightly shake any loose flour off
- Heat the oil over medium high heat in skillet until very hot, add 2 tbsp butter and cook chicken till golden brown on both sides. You will probably have to do two batches of chicken, so before doing the second batch add another 2 tbsp butter to skillet.
- When chicken is cooked and brown on both sides transfer to plate and set aside.
- Add 2 tbsp butter and mushrooms. Cook while stirring on and off till mushrooms are golden brown.
- Add marsala wine and red wine and bring to a boil.
- Lower heat slightly and cook till has reduced by half
- Add chicken broth and 4 tbsp butter. Cook 5-10 minutes till sauce has thickened.
- Add chicken back to pan and cook about 5 minutes.
- Serve and enjoy.
