We love Chinese food and when we were in Hawaii we had this amazing noodle dish that had me thinking of making lo mein. I got the noodles at a local Chinese supermarket we have, but a regular supermarket should also have them.
- 12 oz pack lo mein noodles
- 2 1/2 tbsp sesame oil
- 2 tbsp vegetable oil
- 2 lbs shrimp, peeled and deveined
- 1 tbsp minced garlic
- 1/2 cup chopped carrots
- 1 cup chopped broccoli
- 1 cup chopped mushrooms
- 2/3 cup clam juice
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 2 tbsp chinese rice wine
- 1 tbsp honey
- Cook noodles according to package directions, drain and rinse in cold water and shake well to remove excess water. Toss with sesame oil and set aside
- Combine clam juice, soy sauce, oyster sauce, rice wine and honey in a small bowl and set aside
- Heat wok or skillet and add vegetable oil.
- Once warm add shrimp and garlic, once cooked pour out of skillet and set aside.
- Cook vegetables in same skillet (I added a little vegetable broth to help cook them)
- Add shrimp and garlic back to skillet.
- Add noodles, sauce and mix well till combined.
- Cook over medium heat till dish is warmed up.
