Loaded Sweet Potato Skins

I love sweet potatoes and after picking some up at the Winter Farmers Market I knew this recipe was perfect. Since I was already making bacon for Kyle's brussel sprouts I figured this would be great for me since I'm not a fan of brussel sprouts.
