Apple Bacon Stuffed Sweet Potatoes

I forgot to grab extra goat cheese (used the package I picked up for a mac and cheese) so I just made the topping and served over a sliced potato. This was really good and I love doing something different with sweet potatoes. Will try this again with the goat cheese because I'm sure it's amazing with it. Here's the link to the recipe
